The perfect sauce to balance with our spicy Mexican Veggie dumplings!
Ingredients:
- 2 ripe avocados
- 1 small red onion, finely diced
- 1 small, crushed garlic clove
- 1/2 a handful of chopped coriander
- 2 Tbsp of chunky tomato salsa
- Juice of 1-2 limes
- Salt
- Pepper
Instructions:
Scope avocado pulp into bowl, mash with back of fork while still leaving chunky.
Toss with the onion, coriander, lime juice and tomato salsa.
Add salt and pepper to taste.
