PInch's Story


Like many restaurants and food ventures, the idea for Pinch was born in the home kitchen. Similar to falling in love, it’s sometimes hard to pinpoint the exact moment that *it* happened. While living in Edinburgh back in 2009, inspired by a recent trip to Puerto Rico, I was cooking sweet Caribbean-style pork loin and fried plantains for friends in my new flat. I wanted a fun, communal starter and had been on a chipotle pepper kick, so tried my hand at whipping up some turkey-chipotle potstickers. They were a hit, and from there the limitless ideas for dumpling fillings grew organically, nurtured by dining and traveling – favourite pastimes of mine.

Since then, there have been a few starts and stops for the not-yet-named "Pinch" venture, not to mention a move to Amsterdam in between. After years of fantasising about dumplings while in the corporate world, and with the encouragement of my partner Ed, we decided to give Pinch a proper go by opening our home to paying (eek!) strangers (yikes!) on Restaurant Day in February of 2015. The event went so incredibly well that it gave us the confidence to push ahead with Pinch. Fast-forward to now, and Pinch dumplings are available in 20 retail locations across the Netherlands! We continue to host exciting pop-up dinners, cater private events, sell out markets, and organise wine & beer pairings with our internationally inspired dumplings. 

In 2015, we proved the Pinch concept. In 2016, we brought our dumplings to some great festivals AND made them available in the supermarket. 2017 is the year of partnerships and growth.

Our Philosophy


Making healthy, easy

Pinch wants to make the healthy choice the easy choice. That’s why we use lean cuts of high-quality, local meat and never throw in cheap, fatty fillers to bulk up our dumplings. In fact, every dumpling is stuffed with loads of veggies, herbs and home-made spice combinations to boost flavour and make sure you leave feeling satisfied and happy with your meal.

The ultimate goal of Pinch is to become a successful social enterprise. It sounds fluffy, but one of the reasons behind the cultural fusion in our cooking is the belief that the shared human experience binds us, rather than separates us. In future, we plan to design and run our own community and global initiatives but during our start-up phase, we are happy to partner with other organisations that are already doing great things.

Right now, we’re working with Street Smart – an Amsterdam-based initiative helps the homeless by adding a voluntary €1 donation to customers’ restaurant bills in participating restaurants during a few months of the year.
